Apple Cider Glazed Pork Tenderloin with Sweet Potato Mash

  • 11.5 pounds pork tenderloin, trimmed of excess fat
  • ½ cup apple cider
  • 2 tablespoons Dijon mustard
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 clove garlic, minced
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon ground cloves
  • Salt, to taste
  • Pepper, to taste
  • 2 tablespoons olive oil
  • 4 medium-sized sweet potatoes, peeled and cubed
  • ¼ cup milk
  • 2 tablespoons unsalted butter
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, whisk together ½ cup apple cider, 2 tablespoons Dijon mustard, 2 tablespoons brown sugar, 1 tablespoon apple cider vinegar, 1 clove garlic (minced), ¼ teaspoon ground cinnamon, and ¼ teaspoon ground cloves. Set aside.
  3. Season the pork tenderloin generously with salt and pepper.
  4. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Once hot, add the pork tenderloin and sear until browned on all sides, about 2-3 minutes per side.
  5. Transfer the seared pork to an oven-safe dish. Pour the apple cider glaze over the pork, making sure it’s evenly coated.
  6. Bake in the preheated oven for 20-25 minutes, or until the internal temperature reaches 145°F (63°C). Baste the pork with the glaze halfway through cooking.
  7. While the pork is baking, prepare the sweet potato mash. Boil 4 peeled and cubed sweet potatoes in a medium saucepan with salted water until fork-tender, about 15 minutes.
  8. Drain the sweet potatoes and return them to the pot. Add 2 tablespoons butter, ¼ cup milk, ½ teaspoon salt, and ¼ teaspoon black pepper. Mash until smooth and creamy. Adjust seasoning as needed.
  9. Once the pork is done, remove it from the oven and let it rest for 5 minutes before slicing. This helps retain the juices and keeps the meat tender.
  10. Slice the pork tenderloin into medallions and serve with the sweet potato mash. Drizzle any remaining glaze from the baking dish over the pork for extra flavor.
