  • 2 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp brown sugar
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp chili powder (optional)
  • 1 cup beef broth
  • 2 tbsp apple cider vinegar
  • Soft sandwich buns or brioche rolls (potato rolls preferred)
  • Pickles (homemade dill or good-quality store-bought crunchy dill slices)
  • ½ cup BBQ sauce (optional)
  • Butter for toasting buns (unsalted, softened)

Instructions

  1. Trim excess fat from the brisket, leaving about ¼ inch for flavor and moisture.
  2. Mix smoked paprika, garlic powder, onion powder, brown sugar, kosher salt, black pepper, and chili powder in a bowl.
  3. Rub the dry spice mixture all over the brisket generously, pressing it into the meat.
  4. Heat a heavy pan over medium-high heat with a splash of oil and brown the brisket on all sides until a deep crust forms.
  5. Place the seared brisket in a roasting pan or Dutch oven. Pour in beef broth and apple cider vinegar.
  6. Cover tightly with a lid or foil and cook at 300°F (150°C) in the oven for 2.5 to 3 hours, checking for tenderness after 2.5 hours.
  7. Remove brisket from oven, cover loosely with foil, and let rest for at least 15 minutes.
  8. Slice brisket thinly against the grain.
  9. Spread softened butter on the cut sides of the buns and toast them in a skillet or under a broiler until golden and crisp.
  10. Assemble the sandwich by layering sliced brisket on the bottom bun, drizzling with BBQ sauce if using, topping with pickles, and adding the top bun.

Notes

If brisket isn’t tender after initial cooking, cook an extra 15-30 minutes. Slice against the grain for tenderness. Use small-curd, firm pickles for best crunch. For gluten-free, swap buns with gluten-free rolls or lettuce wraps. Rest meat for at least 15 minutes before slicing to retain juices.
