  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1 cup Italian-style breadcrumbs

  • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
  • 1/2 teaspoon garlic powder
  • Salt & freshly ground black pepper, to taste
  • 34 tablespoons olive oil or avocado oil (for griddle and drizzling)
  • Marinara sauce, for dipping (optional)

Instructions

  1. Place mozzarella sticks on a tray and freeze for at least 45 minutes, or up to 2 hours.
  2. Set up three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of panko breadcrumbs, Italian breadcrumbs, parmesan, Italian herbs, garlic powder, salt, and pepper. Toss the breadcrumb mixture to combine.
  3. Roll each frozen mozzarella stick in flour (tap off excess), dip in egg, then roll in the breadcrumb mix. For extra crunch, double-dip: back into the egg, then breadcrumbs again. Set coated sticks on a tray and return to the freezer for 15-20 minutes.
  4. Preheat your Blackstone griddle to medium-high (about 375°F). Drizzle with 2-3 tablespoons oil and spread evenly.
  5. Gently lay the breaded mozzarella sticks on the hot, oiled griddle, leaving space between each. Cook for 2-3 minutes per side, turning with tongs, until all sides are golden brown and crisp (total cook time: 8-10 minutes).
  6. Transfer fried mozzarella to a wire rack or paper towel-lined plate. Let cool for 1-2 minutes. Serve warm with marinara sauce for dipping.
