  • ½ cup buffalo sauce (e.g., Frank’s RedHot)
  • 2 cups cooked rice or quinoa (brown rice or cauliflower rice for low-carb)
  • 3 cups chopped romaine lettuce or mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded carrots
  • ½ cup celery sticks, chopped
  • ½ cup blue cheese crumbles or vegan blue cheese (optional)
  • 1 can (15 oz / 425 g) chickpeas, drained and rinsed
  • 2 tbsp harissa paste
  • 1 tbsp extra virgin olive oil
  • ½ tsp smoked paprika
  • Salt to taste
  • ½ cup Greek yogurt or dairy-free yogurt alternative
  • 1 tbsp freshly squeezed lemon juice
  • 1 tsp honey or maple syrup (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Pat chickpeas dry with a kitchen towel.
  2. Toss chickpeas with olive oil, harissa paste, smoked paprika, and salt until evenly coated.
  3. Spread chickpeas in a single layer on a baking sheet. Roast for 20-25 minutes, shaking the pan every 7 minutes until golden and crunchy.
  4. Cook rice or quinoa according to package instructions. Fluff with a fork and set aside to cool slightly.
  5. In a small bowl, whisk together Greek yogurt, lemon juice, honey (if using), salt, and pepper until smooth. Adjust seasoning to taste.
  6. Shred cooked chicken breast and toss with buffalo sauce until well coated.
  7. Halve cherry tomatoes, chop celery and carrots, and roughly chop greens.
  8. Assemble the bowl: start with rice or quinoa base, layer greens, buffalo chicken, roasted harissa chickpeas, and veggies on top.
  9. Drizzle with yogurt dressing and sprinkle blue cheese crumbles if using.

Notes

Dry chickpeas thoroughly before roasting for best crispiness. Do not overcrowd baking sheet to ensure even roasting. Use rotisserie chicken for convenience. Yogurt dressing balances the heat of buffalo and harissa. Prep chickpeas and grains ahead to save time. Store dressing separately to avoid sogginess.
