These brie and cranberry phyllo cups are a quick, easy, and festive appetizer featuring flaky phyllo pastry, creamy brie cheese, and tangy cranberry sauce. Perfect for Friendsgiving or any holiday gathering, they deliver a delicious bite-sized treat with gourmet flair.

Ingredients

  • Phyllo dough sheets (3-4 sheets per cup)
  • Unsalted butter, melted (for brushing)
  • Brie cheese, cut into small cubes or slices (about 1 tablespoon per cup)
  • Cranberry sauce (about 1 teaspoon per cup)
  • Fresh thyme leaves (optional)
  • Honey (a drizzle, optional)
  • Chopped pecans or walnuts (optional)
  • Salt and black pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lay out one sheet of phyllo dough at a time on a clean surface and brush lightly with melted butter. Stack 3-4 sheets per cup, brushing each layer with butter. Keep unused sheets covered with a damp towel.
  3. Cut the stacked phyllo into 3×3 inch squares.
  4. Press the phyllo squares into the cups of a muffin tin, shaping them into little cups with edges sticking out.
  5. Bake the phyllo cups for 8-10 minutes until lightly golden but not fully browned.
  6. Remove the cups from the oven and add about 1 tablespoon of brie into each cup, followed by 1 teaspoon of cranberry sauce on top.
  7. Add optional toppings such as fresh thyme leaves, chopped nuts, and a drizzle of honey.
  8. Return the cups to the oven and bake for another 8-10 minutes until the brie melts and the phyllo turns golden brown and crispy.
  9. Let the cups cool for 5 minutes before gently removing them from the muffin tin.

Notes

Keep unused phyllo sheets covered with a damp towel to prevent drying out. Use room temperature brie for better melting. Watch the oven closely during the final baking stage to avoid burning the phyllo. Let cups cool briefly before serving to help them hold their shape. For dairy-free, swap brie with vegan cheese and cranberry sauce with fruit chutney.
