  • 1 cup (150 g) frozen or fresh corn kernels
  • 1/2 cup (75 g) diced celery
  • 1/4 cup (40 g) diced red onion
  • 3/4 cup (180 ml) buffalo wing sauce
  • 2 tbsp (30 g) unsalted butter, melted
  • 1/3 cup (80 ml) ranch or blue cheese dressing
  • 1 tbsp (15 ml) fresh lime juice
  • 2 tbsp (8 g) chopped fresh cilantro or parsley (optional)
  • Salt and pepper to taste
  • Optional toppings: shredded cheddar or mozzarella cheese, crumbled blue cheese, chopped green onions, sliced jalapeños

Instructions

  1. Drain and rinse the black beans thoroughly to remove any canning liquid.
  2. Dice the celery and red onion into small, even pieces about 1/4-inch (0.6 cm) dice.
  3. If using frozen corn, thaw it by running under warm water and draining well.
  4. In a small saucepan over low heat, combine the melted unsalted butter and buffalo wing sauce. Stir gently until smooth and warm but not boiling, about 2-3 minutes. Alternatively, microwave in 20-second bursts, stirring in between.
  5. In a large mixing bowl, combine the black beans, corn, diced celery, and red onion.
  6. Pour the buffalo sauce mixture over and gently toss to coat everything evenly, using a folding motion to avoid smashing the beans.
  7. Pour in the ranch or blue cheese dressing and freshly squeezed lime juice. Gently stir until well combined but still chunky.
  8. Taste and season with salt and pepper to your liking.
  9. Stir in chopped cilantro or parsley if using.
  10. Sprinkle shredded cheese or crumbled blue cheese on top if desired.
  11. Add sliced jalapeños or green onions for extra spice if desired.
  12. Serve immediately or refrigerate for 30 minutes to let flavors meld. Stir gently before serving.

Use room temperature veggies and beans for better blending without mushiness. Rinse canned black beans to remove excess salt and canned flavor. Warm buffalo sauce and butter gently to meld flavors. Fold ingredients gently to keep bean texture. Adjust spice level by choosing milder buffalo sauce or adding extra dressing. Prep veggies ahead to save time.
