  • 1 lb boneless skinless chicken breasts or thighs
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tbsp fresh parsley, finely chopped
  • 1 tsp fresh thyme leaves or ½ tsp dried thyme
  • Salt and pepper to taste
  • ½ cup hot sauce (Frank’s RedHot recommended)
  • 3 tbsp unsalted butter, melted
  • 1 tsp garlic powder
  • Pinch of cayenne pepper (optional)
  • 2 cups cooked brown rice or quinoa
  • 1 cup shredded romaine lettuce or mixed greens
  • ½ cup celery, thinly sliced
  • ½ cup cherry tomatoes, halved
  • ¼ cup shredded carrots
  • ¼ cup crumbled blue cheese or feta (optional)
  • 2 tbsp chopped green onions
  • Ranch or blue cheese dressing for drizzling
  • Fresh lemon wedges for garnish

Instructions

  1. In a large bowl, combine olive oil, minced garlic, lemon juice, lemon zest, chopped parsley, thyme, salt, and pepper. Toss the chicken in the marinade, cover, and refrigerate for at least 30 minutes or up to 2 hours.
  2. Cook 2 cups of brown rice or quinoa according to package instructions. Fluff with a fork and set aside to cool slightly.
  3. In a small bowl, mix hot sauce, melted butter, garlic powder, and cayenne pepper if using. Stir until smooth and set aside.
  4. Heat a grill pan or skillet over medium-high heat. Cook the chicken for 5–7 minutes per side until internal temperature reaches 165°F (74°C). Let rest for 5 minutes, then slice into bite-sized pieces.
  5. Place sliced chicken in a clean bowl and toss gently with buffalo sauce until evenly coated.
  6. Slice celery, halve cherry tomatoes, shred carrots, and chop green onions. Wash and dry greens thoroughly.
  7. Assemble bowls starting with cooked grains, then layer shredded lettuce, celery, cherry tomatoes, and carrots. Top with buffalo chicken, sprinkle with blue cheese, and green onions.
  8. Drizzle ranch or blue cheese dressing over the top and garnish with lemon wedges. Serve immediately.

Notes

Marinate chicken for at least 30 minutes for best flavor. Use fresh herbs when possible. If buffalo sauce is too spicy, add honey or more melted butter to mellow it. Rest chicken after cooking to keep it juicy. Store components separately for best leftovers.
