  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup pecans, toasted and chopped

Instructions

  1. Preheat your oven to 350°F (175°C). Spread the chopped pecans on a baking sheet and toast them for 5-7 minutes until fragrant. Let them cool completely.
  2. In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar using an electric mixer until light and fluffy—about 2-3 minutes.
  3. Mix in the eggs one at a time, followed by the vanilla extract. Beat until fully combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Fold in the toasted pecans using a spatula.
  6. Cover the bowl with plastic wrap and chill the dough in the refrigerator for at least 30 minutes.
  7. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  8. Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the baking sheet, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes, or until the edges are lightly golden but the centers are still soft.
  10. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack.
