  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup caramel bits
  • 1 cup peeled and diced apple (Granny Smith or Honeycrisp)

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2–3 minutes).
  3. Mix in the eggs, one at a time, followed by the vanilla extract.
  4. In a separate bowl, whisk together the flour, oats, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Gently stir in the caramel bits and diced apples, ensuring they’re evenly distributed.
  7. Use a cookie scoop or tablespoon to drop rounded spoonfuls of dough onto the prepared baking sheets, spaced about 2 inches apart.
  8. Bake for 12–14 minutes, or until the edges are lightly golden. The centers may look slightly underdone—that’s okay!
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a cooling rack.
