  • 1/4 cup tomato paste
  • 2 tbsp Worcestershire sauce
  • 2 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp dried thyme
  • 1 tsp kosher salt (plus extra for seasoning brisket)
  • 1/2 tsp black pepper
  • Optional: 1/2 tsp chipotle chili powder
  • Optional: 2 tbsp Dijon mustard
  • Optional: Fresh parsley or cilantro, chopped (for garnish)

Instructions

  1. Pat the brisket dry with paper towels. Sprinkle both sides with 1 tsp kosher salt and 1/2 tsp black pepper.
  2. Heat 2 tbsp olive oil in a large skillet over medium-high heat. Sear the brisket for 3-4 minutes per side until a deep brown crust forms.
  3. In the same skillet, cook the sliced onions over medium-low heat for 10-15 minutes, stirring occasionally. Once golden and soft, add minced garlic and cook for another minute.
  4. In a mixing bowl, whisk together brown sugar, apple cider vinegar, beef broth, tomato paste, Worcestershire sauce, smoked paprika, cumin, and thyme. Stir in caramelized onions and garlic.
  5. Place the seared brisket in your slow cooker. Pour the sauce mixture evenly over the brisket. Cover and set to low for 8-10 hours (or high for 5-6 hours).
  6. Remove brisket onto a cutting board. Let it rest for 10 minutes. Using forks or shredding claws, pull the meat apart into thick shreds.
  7. Optional: Pour sauce from the slow cooker into your skillet. Simmer over medium heat for 5-7 minutes until thickened and glossy.
  8. Return shredded beef to the slow cooker (or a serving dish). Toss with reduced sauce until evenly coated. Garnish with fresh parsley or cilantro if desired.
