Ingredients

Scale
  • 2 cups (250 grams) all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon granulated sugar
  • 6 tablespoons (85 grams) cold unsalted butter, cubed
  • 1 ½ cups (about 170 grams) shredded sharp cheddar cheese
  • 1 cup (240 ml) buttermilk
  • 1 teaspoon garlic powder
  • 2 tablespoons chopped fresh parsley (optional)
  • 4 tablespoons (55 grams) unsalted butter, melted (for topping)
  • Pinch of garlic powder (for topping)
  • A little parsley (for topping)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or a silicone mat.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, sugar, and garlic powder until combined.
  3. Add the cold, cubed butter to the dry mix. Using a pastry cutter or fork, work the butter into the flour until the mixture looks like coarse crumbs with pea-sized bits.
  4. Stir in the shredded cheddar cheese and chopped fresh parsley, if using.
  5. Slowly add the cold buttermilk and gently stir with a wooden spoon or spatula until just combined. The dough will be sticky.
  6. Using a large spoon, scoop dough onto the baking sheet, making 8-10 mounds about 2 inches wide. Gently pat the tops to flatten slightly and space them about 2 inches apart.
  7. Bake for 12-15 minutes until the tops are golden and the edges crisp.
  8. While baking, melt the 4 tablespoons of unsalted butter and stir in a pinch of garlic powder and a little parsley.
  9. As soon as the biscuits come out of the oven, brush them generously with the garlic butter. Serve warm.

Notes

Use cold butter and buttermilk to ensure flaky, tender biscuits. Avoid overmixing the dough to prevent toughness. Freshly shred cheddar cheese for better melting. If biscuits aren’t rising, check baking powder freshness. You can refrigerate dough up to 24 hours before baking.
