  • 2 cups Nacho Cheese Doritos, crushed (plus extra for topping, about 2 oz total)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese (divided, about 8 oz)
  • 1 can (10 oz) Rotel tomatoes with green chilies, drained
  • 1/2 cup onion, finely chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • Optional: 1/2 cup black beans, rinsed and drained
  • Optional: 1/2 cup frozen corn
  • Optional: Sliced jalapeños, to taste

Instructions

  1. Preheat oven to 350°F (175°C). Lightly spray a 9×13-inch baking dish with nonstick spray.
  2. Crush about 2 cups of Doritos into chunky pieces (not fine crumbs).
  3. In a large bowl, mix shredded chicken, cream of chicken soup, sour cream, drained Rotel tomatoes, chopped onion, garlic powder, paprika, half the cheddar cheese, and salt and pepper. Stir until well combined.
  4. Spread half of the crushed Doritos on the bottom of the prepared baking dish.
  5. Evenly spread the chicken mixture over the Doritos layer.
  6. Top with the remaining crushed Doritos.
  7. Sprinkle the remaining cheddar cheese evenly over the top.
  8. Cover loosely with foil and bake for 20 minutes.
  9. Remove foil and bake an additional 10-15 minutes, until cheese is melted, bubbly, and Doritos are golden and crisp (total bake time: 30-35 minutes).
  10. Let casserole rest for 5-10 minutes before serving.

For best results, use freshly shredded cheese for optimal melting. To make gluten-free, use gluten-free condensed soup and check Doritos packaging. Add-ins like black beans, corn, or jalapeños can boost flavor and nutrition. If making ahead, add the top layer of Doritos and cheese just before baking.
