  • 1 cup shredded mozzarella cheese
  • 3/4 cup freshly grated parmesan cheese, divided (1/2 cup for filling, 1/4 cup for topping)
  • 1/4 cup salted butter, melted
  • 3 cloves fresh garlic, minced
  • 2 tablespoons chopped fresh parsley (or 2 teaspoons dried parsley)
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • Pinch of salt (if using unsalted butter)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a small microwave-safe bowl, melt the butter. Add minced garlic and microwave for 20 seconds until fragrant. Stir in 1 tablespoon parsley and Italian seasoning. Set aside.
  3. In a medium bowl, combine mozzarella, 1/2 cup parmesan, and red pepper flakes if using. Toss to mix. Reserve remaining 1/4 cup parmesan for topping.
  4. Open the can of biscuit dough and separate the biscuits. Cut each biscuit in half for smaller bites. Flatten each piece into a 2-inch round.
  5. Place 1 generous teaspoon of the cheese mixture in the center of each round. Pull the edges up and pinch to seal, forming a ball.
  6. Arrange the biscuit bites seam side down on the prepared baking sheet, spacing about 2 inches apart. Brush each with the garlic butter mixture.
  7. Sprinkle the remaining 1/4 cup parmesan over the tops. Add extra parsley if desired.
  8. Bake for 14-17 minutes, or until golden brown and cheese is bubbling. Rotate the tray halfway through if needed.
  9. Let cool for 3-4 minutes on the baking sheet. Serve warm for best texture.

For best results, use freshly grated parmesan and avoid overfilling the dough. Seal the edges well to keep the cheese inside. Brush with garlic butter before and after baking for extra flavor.
