Cheesy Mashed Potato Puffs Recipe – Easy Holiday Side

These cheesy mashed potato puffs are crispy on the outside, creamy on the inside, and packed with cheesy goodness, making them the perfect holiday side dish.

  • 3 cups cold mashed potatoes
  • 1 cup shredded cheese (cheddar, Gruyère, mozzarella, or a mix)
  • 2 large eggs, whisked
  • 1/4 cup all-purpose flour
  • 2 tablespoons milk (or dairy-free milk)
  • 2 tablespoons green onions, thinly sliced
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • Butter or cooking spray for greasing the muffin tin

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly grease your muffin tin with butter or non-stick spray.
  2. In a large mixing bowl, combine 3 cups of cold mashed potatoes, 2 whisked eggs, 1/4 cup of all-purpose flour, 2 tablespoons of milk, and 1 cup of shredded cheese. Stir until the mixture is well combined and smooth.
  3. Fold in 2 tablespoons of chopped green onions, 1/2 teaspoon of salt, and 1/4 teaspoon of freshly ground black pepper. Taste and adjust seasoning as needed.
  4. Use a spoon or small cookie scoop to evenly divide the potato mixture into the greased muffin tin. Each cup should be about three-quarters full.
  5. Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the tops are golden and slightly crispy. The edges will pull away from the sides of the tin when done.
  6. Allow the puffs to cool for about 5 minutes before removing them from the tin. Use a butter knife to gently loosen the edges if needed.
  7. Plate the puffs warm and garnish with extra chopped green onions or a sprinkle of cheese. Serve and enjoy!
