These Chewy Christmas M&M Cookie Bars are the perfect blend of chewy, buttery goodness and vibrant holiday colors, making them a must-have treat for any Christmas gathering.

Ingredients

Scale
  • 1 cup (230g) unsalted butter, softened
  • 1 cup (200g) brown sugar
  • ½ cup (100g) granulated sugar
  • 2 large eggs
  • 1 ½ teaspoons vanilla extract
  • 2 ½ cups (315g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (180g) Christmas M&Ms
  • ½ cup (90g) chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, letting it slightly overhang the sides for easy removal.
  2. In a large mixing bowl, cream together 1 cup (230g) softened unsalted butter, 1 cup (200g) brown sugar, and ½ cup (100g) granulated sugar until light and fluffy. This should take about 2-3 minutes using an electric mixer.
  3. Add 2 large eggs, one at a time, mixing well after each addition. Stir in 1 ½ teaspoons vanilla extract.
  4. In a separate bowl, whisk together 2 ½ cups (315g) all-purpose flour, 1 teaspoon baking soda, and ½ teaspoon salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix, as this can make the bars tough.
  6. Gently fold in 1 cup (180g) Christmas M&Ms and ½ cup (90g) chocolate chips (optional) using a spatula. Reserve a small handful of M&Ms for topping.
  7. Spread the dough evenly into the prepared baking pan. Use the spatula to smooth out the top and press the reserved M&Ms on the surface for a festive look.
  8. Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean. Don’t overbake—the bars should be slightly soft in the center for the perfect chewy texture.
  9. Remove the pan from the oven and let the bars cool completely in the pan before lifting them out using the parchment paper. Slice into squares or rectangles and serve!
