  • ½ cup (113g) unsalted butter, softened
  • ⅓ cup (70g) brown sugar, packed
  • ⅓ cup (67g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup (170g) gluten-free chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together almond flour, tapioca flour, xanthan gum, baking soda, and fine sea salt. Set aside.
  3. In a large bowl, beat softened unsalted butter with brown sugar and granulated sugar until light and fluffy, about 2 to 3 minutes.
  4. Beat in the large egg and vanilla extract until fully combined and smooth.
  5. Gradually add the dry mix to the wet ingredients, stirring just until no dry streaks remain. Avoid overmixing.
  6. Gently fold in the gluten-free chocolate chips evenly throughout the dough.
  7. Use a cookie scoop or tablespoon to drop dough balls about 2 inches apart on the prepared baking sheets. Flatten slightly with your fingers.
  8. Bake for 10–12 minutes, or until edges are golden but centers still look soft.
  9. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

If cookies spread too thin, chill dough for 20 minutes before baking. If too crumbly, add a splash of milk or an extra egg yolk. Do not overbake to keep cookies chewy. Xanthan gum is essential for structure. Brown sugar adds moisture and chewiness.
