  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup (170g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1/4 cup (50g) brown sugar
  • 1 large egg, room temperature
  • 1/4 cup (85g) unsulfured blackstrap molasses
  • 1 teaspoon vanilla extract
  • Optional: coarse sugar for rolling

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, sift together the flour, ground ginger, cinnamon, cloves, black pepper, baking soda, and salt. Whisk to combine evenly.
  3. In a large bowl, beat the softened butter with granulated sugar and brown sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the egg, then stir in the molasses and vanilla extract until the mixture is dark and well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated to form a soft, sticky dough with visible spice specks.
  6. Using a tablespoon or cookie scoop (about 1.5 tablespoons each), form dough balls. Optionally roll them in coarse sugar. Place cookies about 2 inches apart on the baking sheets.
  7. Bake one sheet at a time for 10-12 minutes, rotating halfway through. Cookies should look set but still soft in the middle.
  8. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

If dough is too sticky to handle, chill for 15 minutes. Remove cookies from oven when edges are set but centers are still soft to maintain chewiness. Rotate baking sheets halfway through baking for even cooking. Use softened, not melted, butter to prevent excessive spreading.
