  • 2 boneless, skinless chicken breasts, sliced thinly
  • 12 ounces wide or medium egg noodles
  • 3 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Cook egg noodles in a large pot of boiling salted water until al dente (6-8 minutes). Drain and set aside.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add sliced chicken breasts, season with salt and pepper, and cook for 4-5 minutes per side until golden brown and cooked through. Remove chicken from skillet and set aside.
  3. In the same skillet, add 2 tablespoons of butter and reduce heat to medium. Once melted, add minced garlic and sauté until fragrant, about 1-2 minutes.
  4. Pour in chicken broth and bring to a simmer. Cook for 3-4 minutes to allow flavors to meld and sauce to slightly reduce.
  5. Return cooked chicken to the skillet, stirring to coat evenly in the buttery garlic sauce.
  6. Add drained noodles to the skillet and toss to combine with the sauce and chicken. Stir in grated Parmesan cheese and continue tossing until the cheese melts and coats the noodles.
  7. Sprinkle freshly chopped parsley over the top before serving. Serve hot and enjoy!
