These thick, soft cookies taste just like the gooey center of a cinnamon roll, topped with a luscious cream cheese swirl. Quick to make and packed with cinnamon flavor, they’re perfect for any occasion and easier than homemade cinnamon rolls.

  • 2 3/4 cups (340g) all-purpose flour
  • 2 tbsp (16g) cornstarch
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup (226g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 3/4 cup (150g) light brown sugar, packed
  • 2 large eggs, room temperature
  • 2 tsp pure vanilla extract
  • 1/3 cup (75g) unsalted butter, melted (for filling)
  • 1/2 cup (100g) light brown sugar, packed (for filling)
  • 1 1/2 tbsp ground cinnamon
  • Pinch of salt (for filling)
  • 4 oz (113g) cream cheese, softened
  • 1/2 cup (60g) powdered sugar
  • 1 tbsp heavy cream or milk
  • 1/2 tsp pure vanilla extract (for swirl)
  • Pinch of salt (for swirl)

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Set butter and cream cheese out to soften.
  3. In a medium bowl, whisk together flour, cornstarch, baking powder, and salt.
  4. In a large bowl, beat softened butter with granulated sugar and brown sugar until creamy and pale, about 2-3 minutes.
  5. Scrape down the bowl, add eggs one at a time, mixing well after each. Stir in vanilla extract.
  6. Gently mix in the flour mixture until just combined. If dough is sticky, chill for 20 minutes.
  7. In a small bowl, mix melted butter, brown sugar, cinnamon, and a pinch of salt for the cinnamon filling until thick and spreadable.
  8. Using a large cookie scoop (about 1/4 cup), portion dough balls onto prepared sheets, spacing 2 inches apart.
  9. Press a deep thumbprint into each dough ball. Spoon or pipe about 2 teaspoons of cinnamon filling into each well, then gently fold dough over to mostly seal.
  10. Bake for 12–14 minutes, until edges are set and just starting to turn golden, but centers are still soft.
  11. Let cookies cool on the pan for 10 minutes, then transfer to a wire rack.
  12. In a small bowl, beat cream cheese, powdered sugar, heavy cream or milk, vanilla, and a pinch of salt until smooth and slightly thick.
  13. Transfer cream cheese mixture to a piping bag. Pipe a swirl on top of each cooled cookie.
  14. Let the swirl set for 10 minutes before serving. Enjoy warm or at room temperature.

Notes

Chilling the dough before baking helps keep cookies thick and soft. For gluten-free, use a 1:1 blend. For dairy-free, use vegan butter and cream cheese. Add orange zest or nuts for variations. Slightly underbake for gooey centers; cookies set as they cool.
