A quick and easy cottage cheese bowl with fresh raspberries and crunchy granola, perfect for a healthy and satisfying Valentine’s treat or anytime snack.

  • 1 cup (240 ml) small-curd, low-fat cottage cheese
  • 1/2 cup (75 g) fresh raspberries
  • 1/3 cup (40 g) granola (preferably with nuts and cinnamon)
  • 1 tbsp (15 ml) honey (optional)
  • 1/2 tsp (2.5 ml) vanilla extract
  • 1 tsp (5 g) chia seeds (optional)
  • Fresh mint leaves for garnish

Instructions

  1. Scoop 1 cup (240 ml) of small-curd cottage cheese into a mixing bowl. Add 1/2 teaspoon (2.5 ml) of vanilla extract and 1 tablespoon (15 ml) of honey if using. Gently mix until honey and vanilla are evenly combined, about 1-2 minutes.
  2. Add 1/2 cup (75 g) of fresh raspberries to the cottage cheese. Carefully fold them in using a spatula or spoon to keep most berries intact, about 30 seconds.
  3. Sprinkle 1 teaspoon (5 g) of chia seeds over the mixture and fold lightly if desired.
  4. Spoon the cottage cheese and raspberry mixture into a serving bowl or glass, filling about 1 cup (240 ml).
  5. Generously sprinkle 1/3 cup (40 g) of granola over the top.
  6. Garnish with fresh mint leaves and serve immediately to keep granola crunchy.

Notes

Gently fold raspberries to keep them intact and avoid a watery mixture. Use fresh ripe raspberries for best flavor. Assemble just before serving to keep granola crunchy. Frozen raspberries can be used if thawed and drained well. Granola can be swapped for nuts or seeds for a low-carb or nut-free version. Cottage cheese can be replaced with Greek yogurt or coconut yogurt for dairy-free option.
