  • 1 1/2 lbs sirloin steak, thinly sliced (ribeye or flank steak work too)
  • 1 tbsp olive oil
  • 1 tsp Kosher salt (or to taste)
  • 1/2 tsp freshly ground black pepper
  • 1/2 tsp smoked paprika
  • 1/2 cup unsalted butter, softened
  • 3 large garlic cloves, minced (about 1 tbsp)
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • 1 tsp fresh thyme leaves
  • 1 tsp lemon juice
  • 1/2 tsp Dijon mustard
  • 1/2 tsp crushed red pepper flakes
  • 1/2 tsp Worcestershire sauce
  • 1/4 tsp sea salt
  • 1/2 tsp honey (optional)
  • 12 slider buns (Hawaiian rolls preferred)
  • 4 oz provolone cheese, sliced
  • Pickled jalapeños (optional, for topping)
  • Arugula (optional, for topping)
  • Crispy onions (optional, for topping)

Instructions

  1. Add softened butter to a small bowl. Stir in garlic, parsley, chives, thyme, lemon juice, Dijon mustard, red pepper flakes, Worcestershire sauce, sea salt, and honey if using. Mix until smooth and set aside at room temperature.
  2. Pat steak dry with paper towels. Sprinkle with Kosher salt, black pepper, and smoked paprika. Let sit at room temperature for about 10 minutes.
  3. Heat olive oil in a large skillet over medium-high heat. Add steak in a single layer and sear for 1-2 minutes per side until browned and medium-rare (about 130°F). Work in batches if needed. Transfer steak to a plate, tent with foil, and let rest for 5 minutes.
  4. Slice slider buns if needed. For extra flavor, brush insides with cowboy butter and toast cut-side down in a dry skillet for 1-2 minutes.
  5. Lay out bottom buns on a baking sheet or platter. Layer steak slices on each bun, followed by a slice of provolone cheese. For melty cheese, broil assembled sliders (without top buns) for 1-2 minutes.
  6. Drizzle each slider generously with cowboy butter. Top with pickled jalapeños, arugula, or crispy onions if desired. Add top buns and press gently.
  7. Serve immediately while hot and fresh.

Notes

For best results, use well-marbled steak and slice against the grain for tenderness. Toasting the buns with a brush of cowboy butter adds extra flavor and prevents sogginess. Cowboy butter can be made up to 5 days ahead. For gluten-free, use GF slider buns and check Worcestershire sauce. Variations include using chicken, portobello mushrooms, or adding spicy cheese.
