This Cowboy Casserole combines ground beef, creamy soup, cheesy goodness, and crispy tater tots for a comforting, easy crockpot dinner that’s perfect for busy families.

Ingredients

Scale
  • 1 lb lean ground beef
  • 1 yellow onion, diced
  • 1 can cream of mushroom soup (10.5 oz)
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 bag frozen tater tots (32 oz)
  • 1/4 cup milk
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a large skillet over medium heat. Add the diced onion and cook until softened, about 5 minutes. Drain excess grease and season with garlic powder, salt, and pepper.
  2. In a mixing bowl, combine the cream of mushroom soup, sour cream, milk, and half of the shredded cheddar cheese. Stir until smooth.
  3. Spray your slow cooker with nonstick cooking spray. Layer the browned beef and onion mixture on the bottom.
  4. Pour the creamy soup mixture over the beef, spreading it evenly.
  5. Top with a single layer of frozen tater tots, arranging them neatly for even coverage.
  6. Sprinkle the remaining shredded cheddar cheese over the tater tots.
  7. Cover and cook on low for 4-5 hours or on high for 2-3 hours. The casserole is done when the tater tots are golden brown and the cheese is bubbly.
  8. Serve hot and enjoy the comforting flavors of this Cowboy Casserole!

Notes

[‘For extra crispy tater tots, uncover the slow cooker for the last 15 minutes of cooking or transfer the casserole to an oven-safe dish and broil for 2-3 minutes.’, ‘You can customize the recipe by adding diced green chiles, bell peppers, or using Greek yogurt instead of sour cream.’, ‘Prep the casserole the night before and refrigerate. Add tater tots and cheese before cooking.’]
