  • 1 cup (about 100g) sharp cheddar cheese, shredded
  • 3 scallions, thinly sliced (white and green parts)
  • ½ teaspoon garlic powder
  • 2 tablespoons fresh herbs (parsley or chives), chopped (optional)

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, salt, and black pepper.
  2. In another bowl, beat the eggs until slightly frothy. Add the milk and melted butter, whisking until smooth.
  3. Pour the wet ingredients into the dry ingredients and gently stir until just combined; the batter will be a bit lumpy.
  4. Fold in the shredded cheddar cheese, sliced scallions, garlic powder, and fresh herbs if using.
  5. Preheat a nonstick skillet or cast iron pan over medium heat. Test readiness by dropping a few drops of water on the surface; if they sizzle and evaporate, it’s ready.
  6. Spoon about ¼ cup (60ml) batter per pancake onto the skillet. Cook for 2 to 3 minutes until bubbles form on the surface and edges look set.
  7. Flip carefully and cook another 2 minutes until golden brown and cooked through. Adjust heat as needed.
  8. Transfer cooked pancakes to a baking sheet in a 200°F (90°C) oven to keep warm while cooking the remaining batter.
  9. Serve warm with your favorite toppings such as sour cream, hot sauce, crispy bacon, or sausage.
