  • 8 oz thinly sliced roast beef (freshly sliced deli roast beef or leftover roast)
  • 4 hoagie rolls or crusty French rolls
  • 4 slices provolone cheese (Swiss cheese can be used as alternative)
  • 2 tbsp unsalted butter, softened
  • 2 cups beef broth (low-sodium preferred)
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • Salt and freshly cracked black pepper to taste
  • Optional: 2 tbsp dry red wine

Instructions

  1. Prepare the au jus: In a medium saucepan, combine beef broth, Worcestershire sauce, garlic powder, onion powder, dried thyme, and optional red wine. Stir well and bring to a gentle simmer over medium heat. Cook for about 10 minutes to meld flavors. Season with salt and black pepper to taste. Keep warm on low heat.
  2. Toast the rolls: Slice the hoagie rolls lengthwise leaving a hinge. Spread about 1/2 tbsp softened butter on the cut sides of each roll. Heat a skillet over medium heat and place rolls butter-side down. Toast until golden and crisp, about 2-3 minutes. Remove from heat.
  3. Assemble the sandwich: Layer about 2 oz of thinly sliced roast beef on the bottom half of each toasted roll. Top each with a slice of provolone cheese. Optionally, place sandwiches back into the warm skillet, cover loosely, and let cheese melt for about 2 minutes.
  4. Serve: Transfer sandwiches to plates. Pour warm au jus into small bowls for dipping. Serve immediately.

Notes

For gluten-free, use gluten-free rolls and gluten-free Worcestershire sauce. For dairy-free, substitute provolone with vegan melting cheese or omit cheese. Freeze beef for 15 minutes before slicing if not pre-sliced thin. Avoid soaking bread in au jus to prevent sogginess; dip each bite lightly instead. Au jus can be made ahead and reheated gently. Cast iron skillet recommended for even heat and perfect crust.
