Ingredients

Scale
  • 45 medium fresh peaches, peeled and sliced
  • 1/2 cup granulated sugar (100g)
  • 1/2 cup brown sugar (110g)
  • 1 cup rolled oats (90g)
  • 1 cup all-purpose flour (120g)
  • 1 tsp ground cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, cold and cubed (115g)
  • 1 tsp vanilla extract
  • 1 tbsp fresh lemon juice
  • 2 tbsp cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch baking pan or line it with parchment paper.
  2. In a large bowl, combine 1 cup all-purpose flour, 1 cup rolled oats, 1/2 cup brown sugar, 1 tsp ground cinnamon, 1/2 tsp baking powder, and 1/4 tsp salt. Mix well.
  3. Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingertips to cut the butter into the mixture until it resembles coarse crumbs with some pea-sized pieces.
  4. Reserve about 1 1/2 cups of this mixture for the crumble topping. Press the remaining mixture firmly into the bottom of the prepared pan to form the crust.
  5. Bake the crust for 10-12 minutes until it’s just starting to turn golden. Remove from the oven and set aside.
  6. While the crust bakes, prepare the peach filling by tossing peeled and sliced peaches with granulated sugar, cornstarch, fresh lemon juice, and vanilla extract until evenly coated.
  7. Spread the peach mixture evenly over the warm crust.
  8. Sprinkle the reserved oat crumble evenly over the peaches without pressing down.
  9. Bake the bars for 30-35 minutes, or until the crumble is golden brown and the peach filling is bubbling around the edges.
  10. Let the bars cool completely in the pan to allow the filling to firm up.
  11. Cut into squares and serve slightly warm or at room temperature.

Notes

Use cold butter to achieve a tender, flaky crust and crunchy topping. Pre-baking the crust prevents sogginess. If crumble browns too quickly, tent with foil. Peeling peaches by blanching in boiling water for 30 seconds helps remove skin easily. For gluten-free, substitute flour with almond or gluten-free baking mix. For dairy-free, use coconut oil instead of butter.
