  • 4 cups (950 ml) fresh apple cider
  • 2 cinnamon sticks (preferably Ceylon cinnamon)
  • 4 to 6 whole cloves
  • 3 allspice berries (optional)
  • 1 fresh orange, sliced
  • 1 tablespoon (15 ml) fresh lemon juice
  • 1 to 2 tablespoons (1530 ml) brown sugar or maple syrup, adjust to taste
  • 1 whole star anise (optional)

Instructions

  1. Pour 4 cups (950 ml) of apple cider into a medium to large saucepan.
  2. Add 2 cinnamon sticks, 4 to 6 whole cloves, 3 allspice berries, and 1 whole star anise if using.
  3. Drop in the orange slices.
  4. Place the pot over medium heat and warm the cider until it’s just about to simmer (around 180°F or 82°C). Avoid boiling.
  5. Reduce heat to low and let the cider simmer gently for 10 to 15 minutes to infuse the spices.
  6. Stir in 1 to 2 tablespoons (15-30 ml) of brown sugar or maple syrup, depending on sweetness preference.
  7. Add 1 tablespoon (15 ml) of fresh lemon juice to brighten the flavors.
  8. Give everything a good stir and taste; adjust sweetness or lemon juice as desired.
  9. If too strong, add a splash of water to mellow the flavor.
  10. Use a fine mesh strainer or slotted spoon to remove the cinnamon sticks, cloves, allspice, star anise, and orange slices.
  11. Pour into mugs and serve hot, optionally garnished with a cinnamon stick or orange slice.

Notes

Heat cider slowly to avoid bitterness. Use whole spices for better flavor and easier removal. Add fresh lemon juice at the end to brighten flavors. Can be made ahead and kept warm in a slow cooker. Optional garnishes include cinnamon sticks or orange slices. Variations include adding bourbon or spiced rum for a spiked version, or fresh herbs like rosemary or thyme for an herbal twist.
