  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/4 teaspoon salt
  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (100g) brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup (240g) pure pumpkin puree
  • 1 cup (175g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium mixing bowl, whisk together all-purpose flour, baking powder, baking soda, ground cinnamon, nutmeg, ginger, and salt.
  3. In a large bowl, use a hand mixer or stand mixer to cream unsalted butter, brown sugar, and granulated sugar until light and fluffy—about 2-3 minutes.
  4. Add the large egg and vanilla extract to the creamed mixture. Mix until fully combined.
  5. Mix in the pure pumpkin puree, scraping down the sides of the bowl as needed. The mixture may look slightly curdled—don’t worry, that’s normal!
  6. Gradually add the dry ingredients to the wet ingredients. Mix on low speed until just combined—avoid overmixing.
  7. Gently fold in semi-sweet chocolate chips with a spatula.
  8. Using a cookie scoop or tablespoon, portion out the dough onto the prepared baking sheets, spacing them about 2 inches apart.
  9. Bake for 12-14 minutes, or until the edges are set and the tops look slightly puffed. The centers will still look soft but will firm up as they cool.
  10. Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
