Instructions

  1. In a medium saucepan, combine 4 cups (960 ml) of whole milk (or preferred milk) with 1 cup (240 ml) heavy cream. Warm over medium heat, stirring occasionally, until small bubbles form around the edges, about 5-7 minutes. Do not boil or scorch.
  2. Whisk in 2 tablespoons (15 g) unsweetened cocoa powder and 3 tablespoons (45 g) granulated sugar. Continue whisking until fully dissolved and smooth, about 2 minutes.
  3. Remove the pan from heat and add 8 ounces (225 g) chopped bittersweet chocolate. Let sit for a minute, then whisk until smooth and glossy. If chocolate isn’t melting smoothly, return to low heat and stir gently.
  4. Stir in 1 teaspoon (5 ml) pure vanilla extract, a pinch of salt, and ½ teaspoon (1 g) ground cinnamon if using. Taste and adjust sugar or spices as desired.
  5. Arrange mini marshmallows, whipped cream, chocolate shavings, peppermint sticks, caramel sauce, crushed cookies, sprinkles, and any extras in small bowls or ramekins for toppings.
