A quick and easy breakfast recipe featuring eggs baked inside ripe avocados, seasoned with Everything Bagel seasoning and finished with a drizzle of hot honey for a sweet-heat kick.

  • 1 large ripe avocado, halved and pitted
  • 2 large eggs, room temperature
  • 12 teaspoons Everything Bagel seasoning
  • 1 tablespoon hot honey (or regular honey mixed with a pinch of cayenne)
  • Salt and pepper to taste
  • Olive oil or cooking spray for greasing the baking dish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice one large avocado in half and remove the pit. Scoop out 1-2 tablespoons of flesh from each half to make room for the egg.
  3. Lightly grease a small oven-safe baking dish with olive oil or cooking spray.
  4. Place the avocado halves in the baking dish, ensuring they sit stable.
  5. Crack an egg into each avocado half carefully, keeping the yolk whole.
  6. Sprinkle about 1 teaspoon of Everything Bagel seasoning over each egg and avocado half. Add salt and pepper to taste.
  7. Bake for 12-15 minutes, checking at 12 minutes for set whites and slightly runny yolks. Bake longer if firmer yolks are preferred.
  8. Remove from oven and drizzle about 1 tablespoon of hot honey over both avocado halves.
  9. Serve immediately, scooping the creamy baked egg and avocado with a spoon.

Notes

Use ripe avocados that yield slightly to gentle pressure but are not mushy. Scoop out enough avocado flesh to fit the egg without overflow. Drizzle hot honey after baking to avoid burning. Check eggs at 12 minutes for desired doneness. Leftovers should be stored in an airtight container and eaten within 1 day.
