An easy, creamy, and spicy buffalo chicken dip made in a crockpot, perfect for parties and game nights. This crowd-pleaser requires minimal prep and delivers rich, tangy flavor with a smooth texture.

Ingredients

Scale
  • 3 cups cooked shredded chicken (about 10.5 oz or 300g)
  • 8 oz cream cheese, softened
  • 1 cup buffalo sauce (8 fl oz)
  • 1/2 cup ranch dressing (4 fl oz)
  • 1 cup shredded cheddar cheese (about 3.5 oz or 100g)
  • 1 cup shredded mozzarella cheese (about 3.5 oz or 100g)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Optional: chopped green onions or chives for garnish

Instructions

  1. Prepare the chicken by shredding finely if using rotisserie or leftover roast chicken.
  2. Soften the cream cheese by leaving it out for 30 minutes or microwaving in 15-second bursts until soft but not melted.
  3. In a medium mixing bowl, combine softened cream cheese, buffalo sauce, and ranch dressing. Stir until smooth and creamy.
  4. Add garlic powder, onion powder, shredded cheddar cheese, and shredded mozzarella cheese. Mix until cheese is evenly distributed.
  5. Fold the shredded chicken into the cheese and sauce mixture until every shred is coated.
  6. Transfer the mixture to the crockpot and spread evenly.
  7. Cook on low for 2 hours or high for 1 hour, stirring gently halfway through if possible.
  8. Check for doneness; the dip should be hot, bubbly, and creamy. Add a splash of ranch or buffalo sauce if too thick and stir.
  9. Garnish with chopped green onions or chives before serving.
  10. Serve warm with tortilla chips, celery sticks, carrot sticks, pretzels, or other preferred dippers.

Notes

Soften cream cheese before mixing to avoid lumps. Cook on low for best creamy texture. Stir gently to avoid runny dip. Adjust spice level by varying buffalo sauce amount. Can be made ahead and refrigerated before cooking. Leftovers store well in fridge up to 4 days or frozen up to 2 months.
