  • 8 ounces fresh burrata cheese
  • 3 medium ripe tomatoes, diced
  • 1 cup fresh basil leaves, loosely packed and torn
  • 3 cloves garlic, minced
  • 3 tablespoons extra virgin olive oil
  • 1/4 cup toasted pine nuts
  • Salt and freshly ground black pepper to taste
  • Pinch of red pepper flakes (optional)
  • Zest from half a lemon

Instructions

  1. Bring a large pot of salted water to a boil. Add 12 ounces of penne and cook according to package instructions, about 10-12 minutes for al dente. Stir occasionally to prevent sticking. Reserve 1 cup of pasta water before draining.
  2. While the pasta cooks, heat a small dry skillet over medium heat. Add 1/4 cup pine nuts and toast, stirring frequently, for 2-3 minutes until golden and fragrant. Remove from heat and set aside.
  3. In a large skillet, heat 3 tablespoons of extra virgin olive oil over medium heat. Add 3 minced garlic cloves and sauté for 30 seconds until fragrant, without browning.
  4. Add the diced tomatoes and cook for 5-7 minutes, stirring occasionally, until softened and juices are released.
  5. Season the sauce with salt, freshly ground black pepper, and a pinch of red pepper flakes if using. Stir in the lemon zest from half a lemon. Let the sauce simmer gently.
  6. Add the drained penne to the tomato sauce in the skillet. Pour in about 1/2 cup of reserved pasta water to loosen the sauce and create a silky texture. Toss well to coat evenly.
  7. Remove the skillet from heat and fold in 1 cup of torn fresh basil leaves to preserve their bright flavor.
  8. Tear the burrata into chunks and gently fold into the warm pasta mixture off the heat, allowing it to soften without melting completely.
  9. Sprinkle the toasted pine nuts over the top just before serving.

Notes

Do not overcook the pasta; al dente texture is best. Reserve pasta water to loosen the sauce as needed. Toast pine nuts carefully to avoid burning. Fold burrata into pasta off the heat to maintain creamy texture. Add basil off the heat to preserve flavor and color.
