  • 1/2 cup Parmesan cheese, freshly grated
  • 8 ounces pasta (penne, fettuccine, or preferred type)
  • 1 cup bell peppers, sliced thin (red, green, and yellow)
  • 1 medium onion, chopped

Instructions

  1. Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Drain and set aside.
  2. Toss chicken pieces with Cajun seasoning, ensuring they are evenly coated. Add a pinch of salt and pepper for extra flavor.
  3. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-6 minutes, stirring occasionally, until golden brown and cooked through. Remove chicken from skillet and set aside.

  7. Gradually add grated Parmesan cheese, stirring until fully melted and sauce is creamy. Taste and adjust seasoning with salt and pepper, if needed.
  8. Return cooked chicken to the skillet and add drained pasta. Toss everything together until pasta is coated in the creamy Cajun sauce.
  9. Garnish with freshly chopped parsley or additional Parmesan cheese, if desired. Serve immediately while hot.
