Creamy Chicken Pot Pie Pasta

A comforting one-pot dish combining the creamy flavors of chicken pot pie with pasta, perfect for busy weeknights or cozy weekends.

  • 1 lb chicken breast, boneless and skinless, diced into bite-sized chunks
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups chicken broth, low-sodium preferred
  • 1 cup heavy cream
  • 2 cloves garlic, freshly minced
  • 2 cups frozen mixed vegetables (peas, carrots, and corn)
  • 12 oz wide egg noodles
  • Salt and pepper, to taste
  • 1 tsp fresh thyme (optional)
  • 1/4 cup Parmesan cheese, grated (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add egg noodles and cook according to package instructions until al dente (6-8 minutes). Drain and set aside.
  2. In a large skillet over medium-high heat, melt 1 tablespoon of butter. Add diced chicken breast and season with salt and pepper. Cook for 5-7 minutes, stirring occasionally, until fully cooked and golden brown. Remove from the skillet and set aside.
  3. Reduce the heat to medium and melt the remaining butter in the skillet. Add minced garlic and cook for 1 minute until fragrant.
  4. Sprinkle flour over the garlic and whisk continuously for 1-2 minutes until the mixture forms a paste.
  5. Slowly pour in chicken broth while whisking to avoid lumps. Once smooth, add heavy cream and stir until the sauce thickens, about 3-4 minutes.
  6. Stir in the frozen mixed vegetables and cook for another 5 minutes until heated through. If using fresh vegetables, steam or sauté them beforehand to ensure they’re tender.
  7. Add the cooked chicken and egg noodles to the skillet. Toss everything together so the pasta is coated in the creamy sauce.
  8. Taste and adjust the seasoning with more salt, pepper, or a sprinkle of fresh thyme if using.
  9. Garnish with freshly grated Parmesan cheese and serve immediately.
