  • 3 large egg yolks
  • 1 teaspoon vanilla extract
  • 4 ounces (115 g) semi-sweet chocolate, chopped
  • 1 cup (240 ml) heavy cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a food processor, pulse the graham crackers or chocolate cookie crumbs until fine. Transfer to a mixing bowl, add the melted butter and sugar, and stir until combined. Press the mixture evenly into the bottom and sides of a 9-inch pie pan. Chill the crust in the refrigerator while you prepare the pudding.
  2. In a medium saucepan, whisk together the sugar, cocoa powder, cornstarch, and salt. Gradually whisk in the milk, ensuring there are no lumps. Heat the mixture over medium heat, stirring constantly. After about 5-7 minutes, the mixture will start to thicken. Once it begins to bubble, reduce the heat to low and cook for another 2 minutes, stirring constantly.
  3. Remove the saucepan from heat and stir in the chopped chocolate and vanilla extract until smooth. Let the pudding cool slightly, then pour it into the chilled crust. Cover with plastic wrap, ensuring the wrap touches the surface of the pudding to prevent a skin from forming. Refrigerate for at least 4 hours or overnight.
  4. Just before serving, whip the heavy cream, powdered sugar, and vanilla extract in a mixing bowl until stiff peaks form. Spread the whipped cream over the chilled pie, creating swirls or peaks for a decorative look.
