Instructions

  1. Prepare the oat flour by pulsing 1 cup of old-fashioned rolled oats in a food processor until fine and flour-like, about 1-2 minutes. Set aside.
  2. Drain 1 cup of cottage cheese in a fine mesh strainer for about 5 minutes to remove excess liquid.
  3. In a food processor or blender, combine the drained cottage cheese, 1/3 cup peanut butter, 1/4 cup maple syrup, 1 teaspoon vanilla extract, and a pinch of salt. Blend until smooth and creamy, about 30-45 seconds.
