  • 1 cup crushed pineapple, drained
  • 1 cup mini marshmallows
  • 2 cups heavy cream, whipped (or store-bought whipped topping)
  • 8 oz cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans (optional)

Instructions

  1. Rinse 2 cups of fresh or frozen cranberries under cold water. If using frozen cranberries, allow them to thaw slightly. Place the cranberries in a food processor and pulse until finely chopped. Transfer them to a bowl and sprinkle with ¾ cup granulated sugar. Stir well and let them sit for at least 15 minutes to macerate.
  2. In a large mixing bowl, beat 8 oz softened cream cheese with 1 teaspoon vanilla extract until smooth and creamy. Set aside.
  3. Using a hand mixer or stand mixer, whip 2 cups of heavy cream until stiff peaks form. Alternatively, use 2 cups of store-bought whipped topping.
  4. Gently fold the whipped cream into the cream cheese mixture until fully combined, keeping the mixture light and airy.
  5. Drain any excess liquid from the macerated cranberries and fold them into the creamy mixture.
  6. Add 1 cup mini marshmallows, 1 cup drained crushed pineapple, and ½ cup chopped pecans (if using). Stir until evenly distributed.
  7. Cover the bowl with plastic wrap and refrigerate for at least 2-3 hours, or overnight, to allow the flavors to meld and the salad to firm up.
  8. Before serving, give the salad a gentle stir. Spoon it into a serving dish and garnish with whole cranberries or chopped pecans for a festive touch.
