  • 2 pounds Yukon Gold or Russet potatoes, peeled and sliced into thin rounds
  • 3 tablespoons unsalted butter
  • 2 large yellow onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup low-sodium beef broth
  • 1 cup heavy cream
  • 1 ½ cups shredded Gruyère or mozzarella cheese
  • 1 teaspoon fresh thyme, chopped
  • Salt and pepper to taste
  • Optional: pinch of smoked paprika
  • Optional: chopped parsley

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat the butter in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, for about 15-20 minutes, until golden and caramelized. Stir in the minced garlic during the last minute of cooking.
  3. In a mixing bowl, whisk together the beef broth, heavy cream, fresh thyme, and a pinch of salt and pepper. Set aside.
  4. Arrange half of the sliced potatoes in a 9×13-inch baking dish, overlapping them slightly. Spoon half of the caramelized onions over the potatoes, followed by half of the shredded cheese. Repeat with another layer of potatoes, onions, and cheese.
  5. Pour the prepared sauce evenly over the layered potatoes. Use a spoon to spread the liquid so it covers all the potatoes.
  6. Cover the dish with foil and bake for 40 minutes. Then remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese is bubbly and golden.
  7. Let the dish rest for 5-10 minutes before serving to allow the flavors to meld and the sauce to thicken.
