Instructions

  1. Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, sugar, and salt. Add melted butter and stir until crumbs are evenly coated and resemble wet sand.
  2. Press the crust mixture firmly into a 9-inch pie dish, especially around the edges. Bake for 8-10 minutes until set and golden. Let cool completely on a wire rack.
  3. In a large bowl, whisk together sweetened condensed milk, fresh lemon juice, and lemon zest until smooth and glossy.
  4. In a separate bowl, beat cold heavy whipping cream with powdered sugar until soft peaks form.
  5. Gently fold about one-third of the whipped cream into the lemon mixture to lighten it, then fold in the remaining whipped cream carefully to keep the filling light and creamy.
  6. Pour the filling over the cooled crust and smooth the top. Cover tightly with plastic wrap and freeze for at least 4 hours or overnight until firm but scoopable.
