  • 2 pounds Yukon Gold or red potatoes, washed and cut into bite-sized chunks
  • 3 cloves garlic, minced
  • ¾ cup freshly grated Parmesan cheese
  • ½ cup mayonnaise, preferably full-fat
  • ½ cup plain Greek yogurt
  • ¼ cup chopped fresh parsley
  • 2 tablespoons fresh chives
  • 1 tablespoon fresh dill
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 2 tablespoons extra virgin olive oil
  • Salt and freshly ground black pepper to taste

Instructions

  1. Place the cut potatoes into a large pot and cover with cold water by about an inch. Add a pinch of salt. Bring to a boil over medium-high heat, then reduce to a simmer. Cook until tender but still firm, about 12-15 minutes.
  2. Drain the potatoes in a colander and rinse briefly with cool water to stop cooking. Let them sit for a few minutes to drain excess water.
  3. In a mixing bowl, whisk together mayonnaise, Greek yogurt, minced garlic, Dijon mustard, lemon juice, and olive oil until smooth. Stir in the freshly grated Parmesan cheese. Season with salt and freshly ground pepper to taste.
  4. Add the cooled potatoes to the bowl with dressing. Gently fold until all pieces are coated evenly, being careful not to mash the potatoes.
  5. Fold in chopped parsley, chives, and dill.
  6. Cover the salad and refrigerate for at least 1 hour before serving (optional but recommended).
  7. Before serving, gently stir the salad and adjust seasoning with salt, pepper, or lemon juice as needed.

Notes

Use Yukon Gold or red potatoes for best texture. Fresh garlic and freshly grated Parmesan cheese are key for flavor. Chill the salad for at least 1 hour to let flavors meld. For dairy-free, substitute mayonnaise and yogurt with vegan versions and Parmesan with nutritional yeast. Add a splash of olive oil or extra yogurt if salad seems dry after chilling.
