A creamy, sweet Butterbeer inspired by the Harry Potter series, featuring a homemade butterscotch syrup and whipped cream topping. Perfect for cozy nights, parties, and magical moments.

Ingredients

Scale
  • 1 cup brown sugar (light or dark, packed)
  • 1/2 cup unsalted butter, melted
  • 1/2 cup heavy cream (for syrup)
  • 1/4 cup water
  • 1 tsp vanilla extract
  • Pinch of salt
  • 2 cups cream soda, chilled
  • 1 cup heavy cream (cold, for whipping)
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract (for whipped cream)

Instructions

  1. Make the Butterscotch Syrup: In a medium saucepan, combine 1 cup brown sugar, 1/2 cup melted unsalted butter, and 1/4 cup water over medium heat. Stir constantly with a whisk until the sugar dissolves completely (about 5 minutes). Watch closely to prevent burning.
  2. Add Cream & Flavor: Remove the pan from heat, then stir in 1/2 cup heavy cream, 1 tsp vanilla extract, and a pinch of salt. Stir until fully combined and silky smooth. Let it cool slightly (about 10 minutes) so it thickens but stays pourable.
  3. Chill the Cream Soda: Place cream soda in the fridge to keep it cold and fizzy.
  4. Whip the Cream Topping: In a chilled mixing bowl, whip 1 cup cold heavy cream with 2 tbsp powdered sugar and 1 tsp vanilla extract until soft peaks form (3-5 minutes).
  5. Assemble the Butterbeer: Pour about 1/4 cup warm butterscotch syrup into each serving glass. Slowly add 1/2 cup chilled cream soda, stirring gently to mix without losing fizz. Top with a generous dollop of whipped cream.
  6. Serve Immediately: Serve right away while cold, creamy, and fizzy. Optionally garnish with cinnamon or extra butterscotch syrup.

Notes

Use real butter and heavy cream for best texture. Whip cream to soft peaks to avoid turning it into butter. Keep cream soda chilled until serving to maintain fizz. Stir syrup gently to avoid burning. Syrup can be reheated gently if hardened.
