  • 3 tablespoons (60 ml) honey, plus extra for drizzling
  • 23 tablespoons (3045 ml) heavy cream
  • 1 teaspoon (5 ml) fresh lemon juice
  • 1/2 teaspoon (1 gram) chili flakes
  • 3 tablespoons (60 ml) honey for hot honey drizzle
  • 1/2 teaspoon (1 gram) chili flakes for hot honey drizzle
  • 1 teaspoon (5 ml) olive oil (optional)

Instructions

  1. Cut the 8 ounces (225 grams) block of feta into chunks to help it blend more evenly.
  2. Place feta chunks in your food processor. Add 2 tablespoons (30 ml) heavy cream, 3 tablespoons (60 ml) honey, and 1 teaspoon (5 ml) fresh lemon juice. Pulse until smooth and creamy, scraping down the sides as needed. This should take about 2-3 minutes.
  3. If the mixture feels too thick, add the remaining tablespoon (15 ml) of cream in small increments and pulse until desired consistency is reached.
  4. In a small saucepan, warm 3 tablespoons (60 ml) of honey over low heat. Add 1/2 teaspoon (1 gram) chili flakes and stir gently. Keep warm, but do not boil, for 5 minutes to infuse the flavors.
  5. Spoon the whipped feta into a serving dish. Drizzle the warm spicy hot honey evenly over the top. Optionally, drizzle 1 teaspoon (5 ml) olive oil for added shine and richness.
  6. Serve immediately with crusty bread, pita chips, or fresh veggies for best texture and flavor.

Notes

Use a block of feta for best whipping results; crumbled feta tends to be grainy. Warm honey gently with chili flakes to release oils and deepen flavor. Scrape down sides of processor often for smooth texture. The whipped feta can be made a day ahead and chilled; add hot honey drizzle just before serving. For dairy-free version, substitute heavy cream with full-fat coconut milk and use plant-based feta; replace honey with agave nectar for vegan option.
