  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 pound sliced mushrooms (button, cremini, or mixed wild mushrooms)
  • 2 tablespoons all-purpose flour
  • 4 cups low-sodium chicken or vegetable broth
  • 2 teaspoons Hungarian paprika
  • 1 teaspoon dried dill
  • Salt and pepper to taste
  • 1 cup sour cream
  • Lemon juice (optional)

Instructions

  1. In a large pot, melt 2 tablespoons of butter over medium heat. Add 1 diced medium onion and sauté until translucent, about 5 minutes.
  2. Add 2 cloves of minced garlic and cook for another minute, stirring continuously to prevent burning.
  3. Stir in 1 pound of sliced mushrooms. Cook for 7-10 minutes, or until the mushrooms release their moisture and begin to brown.
  4. Sprinkle 2 tablespoons of flour over the mushroom mixture and stir well to coat. Cook for 2 minutes to eliminate the raw flour taste.
  5. Gradually pour in 4 cups of chicken or vegetable broth, stirring constantly to prevent lumps. Bring the mixture to a gentle simmer.
  6. Add 2 teaspoons of Hungarian paprika, 1 teaspoon of dried dill, and a pinch of salt and pepper. Stir well and let the soup simmer for about 20 minutes, allowing the flavors to meld.
  7. Reduce the heat to low and stir in 1 cup of sour cream. Mix until fully incorporated and the soup is creamy. If desired, add a squeeze of lemon juice for brightness.
  8. Taste and adjust the seasoning as needed. If the soup is too thick, add a bit more broth to thin it out.
  9. Serve hot, garnished with extra fresh dill or a sprinkle of paprika for color.
