  • 3 cups (360g) powdered sugar, sifted
  • 3 tablespoons Irish cream liqueur (e.g., Baileys)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, beat softened butter until creamy. Add eggs one at a time, mixing well after each addition.
  4. Stir in brewed coffee, buttermilk, and vanilla extract into the butter-egg mixture.
  5. Gradually add dry ingredients to wet ingredients, mixing on low speed or folding gently until just combined.
  6. Spoon batter evenly into cupcake liners, filling about ⅔ full.
  7. Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. Cool cupcakes completely on a cooling rack before frosting.
  9. To make frosting, beat cream cheese and softened butter until smooth and creamy, about 3-4 minutes.
  10. Gradually add powdered sugar, beating on low speed to avoid sugar clouds, then increase to medium speed until fluffy.
  11. Mix in Irish cream liqueur and vanilla extract until smooth. Chill frosting for 15 minutes if too soft.
  12. Frost cooled cupcakes generously using a piping bag or knife.

Chill frosting briefly if too soft to help it firm up without losing creaminess. Avoid overmixing batter to keep cupcakes tender. Use freshly brewed coffee cooled to avoid cooking eggs prematurely. High-quality cupcake liners prevent sticking and tearing. For a stronger coffee flavor, add 1 tablespoon espresso powder to dry ingredients.
