Creamy Lemon Posset Recipe with Easy Raspberry Coulis Dessert

  • 2/3 cup (135 g) granulated sugar
  • Zest of 2 large fresh lemons
  • Juice of 2 large fresh lemons (about 1/4 cup or 60 ml)
  • 1 cup (125 g) fresh raspberries
  • 12 tablespoons (1530 g) powdered sugar (optional, for coulis)
  • 2 tablespoons (30 ml) water

Instructions

  1. In a medium saucepan, combine 2 cups heavy cream and 2/3 cup granulated sugar. Heat over medium-low, stirring regularly until sugar dissolves and cream is hot but not boiling (about 5-7 minutes).
  2. Remove from heat and stir in the lemon zest. Let steep for 10 minutes to infuse flavor.
  3. While cream steeps, juice the lemons and strain through a fine mesh sieve to remove seeds and pulp.
  4. Remove lemon zest from cream mixture using a slotted spoon or strain the cream if preferred.
  5. Stir the fresh lemon juice into the warm cream mixture; it will thicken slightly.
  6. Pour the mixture into serving glasses or ramekins. Let cool at room temperature for 30 minutes, then refrigerate for at least 4 hours or overnight until set.
  7. To make the raspberry coulis, blend 1 cup raspberries with 1-2 tablespoons powdered sugar and 2 tablespoons water until smooth. Strain to remove seeds if desired.
  8. Serve the chilled lemon posset topped with raspberry coulis and garnish with fresh raspberries or mint leaves.

Notes

Do not let the cream boil to avoid curdling. Steep lemon zest for 10 minutes for best flavor. Use fresh lemons for brightness. Chill posset for at least 4 hours to set properly. For dairy-free option, substitute heavy cream with full-fat coconut milk. If posset doesn’t set, let cream cool more before adding lemon juice.
