  • 45 large sweet potatoes, peeled and cubed
  • 1/4 cup pure maple syrup
  • 4 tablespoons unsalted butter, melted
  • 1/3 cup light or dark brown sugar
  • 1/3 cup whole milk or non-dairy alternative
  • 2 large eggs, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • 1 cup chopped pecans
  • 1/4 cup all-purpose flour

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Peel and cube the sweet potatoes into roughly 1-inch pieces. Place them in a large pot and cover with water. Bring to a boil and cook for 10-15 minutes, or until the sweet potatoes are fork-tender. Drain thoroughly.
  3. Transfer the drained sweet potatoes to a large mixing bowl. Add 4 tablespoons of melted butter, 1/4 cup of maple syrup, 1/3 cup of milk, 2 beaten eggs, 1 teaspoon of vanilla extract, 1 teaspoon of cinnamon, and a pinch of salt. Mash or beat with a hand mixer until smooth and creamy. Taste and adjust sweetness or seasoning if needed.
  4. In a separate bowl, combine 1 cup of chopped pecans, 1/3 cup of brown sugar, 1/4 cup of all-purpose flour, and 4 tablespoons of melted butter. Mix until crumbly.
  5. Spread the sweet potato mixture evenly in the greased baking dish. Sprinkle the pecan topping over the sweet potatoes.
  6. Place the dish in the oven and bake for 25-30 minutes, or until the topping is golden brown and the sweet potatoes are heated through.
  7. Remove the casserole from the oven and let it cool for about 5 minutes before serving.
