Instructions

  1. Peel and chop the potatoes: Peel 2 pounds (about 1 kg) of Russet potatoes and cut them into evenly sized chunks.
  2. Boil the potatoes: Place the chopped potatoes in a large pot and cover them with cold water. Add a generous pinch of salt and bring the water to a boil. Reduce the heat to a simmer and cook for 15-20 minutes, or until the potatoes are fork-tender.
  3. Drain and dry the potatoes: Carefully drain the potatoes and return them to the hot pot. Let them sit for 2-3 minutes to evaporate excess moisture.
  4. Heat the cream and butter: In a small saucepan, heat 1/2 cup (120 ml) of heavy cream and 4 tablespoons (56 g) of unsalted butter over low heat until the butter is melted. Do not boil.
  5. Mash the potatoes: Use a potato masher to mash the potatoes until smooth. For ultra-creamy results, pass them through a food mill or ricer.
  6. Add the cream mixture: Gradually pour the warm cream and butter into the mashed potatoes while stirring. Mix until fully incorporated and the texture is creamy.
  7. Season: Add 1 teaspoon of salt and 1/2 teaspoon of black pepper. Taste and adjust seasoning as needed.
  8. Optional additions: If desired, fold in roasted garlic or shredded cheese for extra flavor.
  9. Serve: Transfer the mashed potatoes to a serving dish, garnish with chopped parsley or chives, and serve warm.
