  • 2 pounds russet potatoes, peeled and cut into 2-inch chunks
  • 4 tablespoons unsalted butter, softened and divided
  • 1/2 cup heavy cream, warmed
  • 1/4 cup whole milk, warmed
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 clove garlic, minced and sautéed (optional)

Instructions

  1. Peel the russet potatoes and cut them into evenly-sized chunks (about 2 inches).
  2. Place the potato chunks in a large pot and add enough water to cover them completely. Add a generous pinch of salt to the water. Bring to a boil over medium-high heat, then reduce the heat and simmer for about 15-20 minutes or until the potatoes are fork-tender.
  3. Drain the cooked potatoes in a colander, shaking off excess water. Return the potatoes to the hot pot (with the heat off) for 1-2 minutes to let them dry out slightly.
  4. Using a potato masher or ricer, mash the potatoes until smooth. If you prefer a bit of texture, leave some small lumps.
  5. Add half of the softened butter to the potatoes and gently fold it in until melted and incorporated.
  6. Warm the cream and milk together in a microwave or small saucepan. Gradually add the warm liquid to the potatoes, stirring gently until they reach your desired creamy consistency. Avoid overmixing to prevent gummy potatoes.
  7. Add salt and freshly ground black pepper to taste. If using garlic, add it now for extra flavor.
  8. Dot the top of the mashed potatoes with the remaining softened butter and use a spoon to swirl it in lightly for a beautiful visual effect and pockets of buttery flavor.
  9. Serve immediately while warm.
