This creamy baked cheesy mushroom casserole is a rich, satisfying, and easy-to-make dish that combines the savory depth of mushrooms with the indulgent texture of cream and cheese. Perfect for busy weekdays or gatherings, this vegetarian-friendly recipe is a true comfort food.

Ingredients

Scale
  • 16 ounces fresh mushrooms, sliced (button or cremini work great, but you can use a mix)
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 cup milk (use whole milk for the richest flavor, or swap for a dairy-free option)
  • 1 cup heavy cream
  • 1 ½ cups shredded cheese (cheddar or mozzarella work best, or a mix)
  • Salt and pepper, to taste
  • ½ cup panko breadcrumbs (optional, for a crispy topping)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease your baking dish lightly with oil or butter.
  2. In a large skillet, melt the butter over medium heat. Add the sliced mushrooms and sauté for about 5-7 minutes until they release their moisture and turn golden brown.
  3. Stir in the minced garlic and cook for another 1-2 minutes. Be careful not to burn the garlic—it should be fragrant but not browned.
  4. Sprinkle the flour over the mushrooms and stir well to coat. Cook for 1 minute, allowing the flour to absorb the butter.
  5. Gradually whisk in the milk and heavy cream, stirring constantly to avoid lumps. Let the sauce simmer for 3-4 minutes until it thickens.
  6. Add 1 cup of shredded cheese to the sauce and stir until melted and smooth. Season with salt and pepper to taste.
  7. Pour the creamy mushroom mixture into the prepared baking dish. Spread it out evenly.
  8. Top with the remaining shredded cheese and sprinkle the panko breadcrumbs evenly over the surface.
  9. Bake uncovered for 20-25 minutes, or until the top is golden and bubbly. Let it cool for 5 minutes before serving.

Notes

For maximum flavor, mix different types of mushrooms like cremini, shiitake, or oyster mushrooms. Sauté mushrooms in batches to avoid steaming them. Use freshly shredded cheese for better melting. Customize the topping with grated parmesan or Italian seasoning for extra flavor.
