A creamy, fruity, and indulgent French toast bake that soaks overnight for a custardy, tender texture. Perfect for easy, fuss-free breakfasts that impress.

Ingredients

Scale
  • 8 cups cubed brioche or challah bread (day-old preferred)
  • 2 cups sliced fresh strawberries
  • 8 ounces cream cheese, softened
  • 6 large eggs, room temperature
  • 2 cups whole milk
  • 1 cup heavy cream
  • ½ cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon cinnamon (optional)
  • Pinch of salt
  • Powdered sugar (optional, for dusting)

Instructions

  1. Cube about 8 cups of brioche or challah bread into 1-inch pieces and gently toss with 2 cups sliced fresh strawberries. Set aside.
  2. Beat 8 ounces softened cream cheese until smooth and creamy using an electric mixer or whisk.
  3. In a large bowl, whisk together 6 large eggs, 2 cups whole milk, 1 cup heavy cream, ½ cup granulated sugar, 2 teaspoons vanilla extract, 1 teaspoon cinnamon, and a pinch of salt until combined and slightly frothy.
  4. Slowly fold the cream cheese into the custard mixture until swirled through in creamy ribbons.
  5. Coat a 9×13 inch baking dish with butter or nonstick spray. Add the bread and strawberry mixture evenly.
  6. Pour the custard and cream cheese mixture over the bread, pressing down lightly to soak the bread.
  7. Cover tightly with plastic wrap or foil and refrigerate for at least 6 hours or overnight.
  8. Preheat oven to 350°F (175°C). Remove the dish from fridge and let sit at room temperature for 15 minutes.
  9. Bake uncovered for 45–50 minutes until the top is golden brown and a knife inserted in the center comes out clean.
  10. Let cool for 5 minutes before slicing. Dust with powdered sugar if desired and serve warm.

Notes

Use day-old brioche or challah bread for best texture. Soaking overnight is key for custardy texture. If top browns too fast, tent with foil halfway through baking. Reheat leftovers in oven at 300°F for 10-15 minutes; avoid microwaving to prevent rubbery texture. Frozen strawberries can be used if thawed and drained to reduce moisture.
