Creamy Pea and Ham Soup

A quick and easy creamy pea and ham soup that offers hearty comfort with simple ingredients, perfect for cozy nights and busy weeknights.

  • 4 cups frozen peas (about 600g)
  • 1 ½ cups cooked ham, diced (about 200g)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth (1 liter)
  • ½ cup heavy cream (120ml)
  • 2 tablespoons olive oil or butter
  • 1 tablespoon fresh thyme or parsley, chopped (optional)
  • Salt and pepper to taste

Instructions

  1. Heat 2 tablespoons of butter or olive oil in a large soup pot over medium heat. Add the chopped onion and cook for about 5 minutes until softened and translucent.
  2. Add the minced garlic and cook for another 1 minute, stirring frequently to avoid burning.
  3. Stir in the diced ham and frozen peas. Cook together for 2-3 minutes to let the ham release its smoky aroma and the peas begin to thaw.
  4. Pour in 4 cups of chicken or vegetable broth. Bring the mixture to a gentle boil, then reduce heat to low and simmer uncovered for 15 minutes.
  5. Using an immersion blender, carefully blend the soup until creamy but still slightly textured, leaving some pea bits and ham chunks for heartiness.
  6. Stir in ½ cup of heavy cream and chopped fresh thyme or parsley. Season with salt and pepper to taste. Heat through for 2-3 minutes without boiling, then remove from heat.

Notes

Use good-quality cooked ham with some fat marbling for richer flavor. Blend in short bursts to avoid splatters. Add cream off the heat to prevent curdling. For dairy-free, substitute heavy cream with coconut or cashew cream. Soup can be frozen without cream and cream added when reheating.
